And because it uses my gluten free baking mix it is so quick and easy to make.

This gluten free blueberry coffee cake would work perfect for a special breakfast or lunch, but it also makes a great dessert.

I adapted this gluten free version from a recipe I found in a Bisquick cookbook. I am so glad that the gluten free version of this worked so well.

Raspberry Jam bars were one of the first desserts that I learned to bake when I was a teenager. I loved them and made them all the time.

The version I made was made in the microwave. Remember when microwave cooking was all the rage and everyone was making almost everything in the microwave. Well, somehow my family came across a recipe for microwave jam bars and I made them my signature dessert for at least a year or two. I think my family got very tired of them and I moved on to other desserts, but they always remained a favorite for me.

Really what can be bad about a layer of delicious raspberry, or other fruit jam, sandwiched between layers of oats, butter, and sugar. You really can’t go wrong with that.

The recipe today I am sharing for gluten free raspberry jam bars used my gluten free baking mix in place of the flour in a regular jam bar recipe. And it works perfectly.

These are very similar to the ones I made years ago, but for these I skipped the microwave and baked them in the oven.

Impossible pies are some of the most popular recipes using that big yellow box of baking mix, so I am having fun trying and adapting them to work with my gluten free baking mix.

Gluten Free Impossible Brownie Pie was one of the recipes that I adapted over the holidays that my family loved.

It is a pretty quick and easy dessert. It is nothing fancy, but it is really good. Especially served warm with vanilla ice cream. Delicious!

Easy Gluten Free Drop Biscuits

I have shared a couple of biscuit recipes both in the ebook and here on GF Mixes, but they are for biscuits with things like sausage, pepperoni, and cheese mixed into them.

Several of you have requested a basic biscuit recipe, and although I have made them many times using my homemade baking mix, I have never shared a plain basic biscuit recipe with you. Today I am fixing that and am sharing the recipe.

This is the same basic recipe as my other biscuits, but without the add ins. For gluten free biscuits I have found drop biscuits easiest. They are not quite the same, but it works well because gluten free dough tends to be stickier and a little harder to work with since it is missing the gluten.

If you prefer a rolled out and cut biscuit, just pat this dough out on a surface that is dusting with baking mix, or other gf flour, and then cut and bake like you would a regular biscuit.

These gluten free biscuits are perfect with my gluten free sausage gravy.

Not only are they easy to make, they are also delicious and budget friendly. They can be a main dish, a side dish, or even dessert. And converting them to gluten free is so easy using my basic gluten free baking mix.

Today’s recipe is for a simple impossible buttermilk pie. Buttermilk pie is a classic old fashioned pie and it uses everyday inexpensive ingredients.

Impossible buttermilk pie takes the basic idea from a buttermilk pie and makes it crustless. And when you use my homemade gluten free baking mix, it is easy to make a gluten free impossible buttermilk pie.

We are coming up on the holidays and holiday baking which is often difficult when it comes to eating gluten free. This pie though is a simple pie that is gluten free, but tastes so good that everyone, both gluten free and non gluten free, will enjoy it.
